Ingredients:

  • 2 medium bananas
  • 2 scoops vanilla protein powder (I use Orgain SIMPLE)
  • 1 egg
  • 2 tbsp egg white
  • 1/4 cup peanut butter (I use Teddies All Natural Smooth)
  • Handful chocolate chips (I use Lilys)
  • Pinch of salt
  • 2 tbsp cinnamon
  • 1 tsp baking powder

Instructions:

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or greasing with cooking spray.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the vanilla protein powder, egg, egg white, peanut butter, and mix until well combined.
  4. Stir in the chocolate chips, salt, cinnamon, and baking powder until evenly distributed throughout the batter.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Once baked, remove the muffins from the oven and let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
