High Protein Sourdough French Toast

Relive the nostalgia of childhood mornings with a healthier twist! These protein-packed sourdough French toast sticks are a delightful blend of comfort and nutrition. Made with sourdough bread and boosted with protein powder, they’re perfect for a satisfying breakfast or snack. Let’s dive into the recipe!


  • 2 large pieces of sourdough bread
  • 2 scoops protein powder (I use Orgain SIMPLE)
  • 1 egg
  • 1 cup egg whites
  • 1/2 cup milk (I use Malk Almond Milk)
  • Your choice of sweetener (I used monk fruit)
  • Cinnamon


  • Prepare the Batter: In a bowl, combine the protein powder, egg whites, whole egg, milk, and a generous amount of cinnamon. Mix until well combined to create the batter.
  • Cut the Sourdough: Cut the sourdough bread into 4-5 sticks, resembling traditional French toast sticks.
  • Heat the Pan: Place a non-stick pan over medium heat and add about a teaspoon of coconut oil.
  • Soak the Sourdough: Dip each sourdough stick into the prepared batter, ensuring they are fully coated on all sides.
  • Cook the French Toast Sticks: Place the soaked sourdough sticks onto the preheated pan. Cook for about 30 seconds on each side, or until they are golden brown and slightly crispy.
  • Sweeten and Serve: Once cooked, remove the French toast sticks from the pan and coat them in your favorite sugar-free sweetener. I used monk fruit. Optionally, top with your favorite toppings such as PB2 or maple syrup for added flavor.
