*Makes 4 Bagels

Serving Size: 1 Bagel

Ingredients:

  • 1 cup gluten free flour (I use Bobs Red Mill Gluten Free)
  • 1 cup plain Greek yogurt (I used 0% Fage)
  • 1 tsp baking powder
  • Salt
  • Optional: 1 egg for brushing
  • Optional toppings: Everything bagel seasoning, sesame seeds, poppy seeds, etc.
  • Optional filling: Cream cheese (I recommend Kite Hill Foods, Good Culture or Organic Valley)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. In a mixing bowl, combine almond flour and plain Greek yogurt. Start with 1 cup of yogurt and slowly add more to get the right consistency.
  4. Mix until a dough-like consistency forms.
  5. Add a pinch of salt to taste and incorporate it evenly into the dough.
  6. Divide the dough into two equal portions.
  7. On a lightly floured surface, roll each portion into a log using the palms of your hands.
  8. Bring the ends of each log together and pinch them to form circular bagel shapes.
  9. (Optional) Beat an egg in a small bowl and brush it over the tops of the bagels.
  10. (Optional) Sprinkle your desired toppings, such as everything bagel seasoning, sesame seeds, or poppy seeds, over the egg wash.
  11. Place the shaped bagels onto the prepared baking sheet.
  12. Bake in the preheated oven for about 30 minutes, or until the bagels are golden brown and firm to the touch.
  13. Once baked, remove the bagels from the oven and allow them to cool for a few minutes.
  14. Serve warm with your favorite toppings, such as cream cheese or butter.
