Enjoy your morning with these blood sugar balancing simple pancakes! Made with wholesome ingredients like oats, eggs, and powdered peanut butter, these pancakes are packed with flavor and protein. Simply blend the batter, cook until golden brown, and top with a creamy peanut butter frosting for a perfect topping. Yields: 6 small Pancakes

Serving size: 3 pancakes

Ingredients:

  • 2 eggs
  • 1 cup oats
  • 2 tbsp egg white
  • 4 tbsp powdered peanut butter (or 4 tbsp protein powder)
  • 2 tbsp of your preferred sweetener (I used coconut sugar)
  • Pinch of salt, cinnamon, and baking powder

For the frosting:

  • Peanut butter powder
  • Peanut butter (I use Teddies All Natural Smooth)
  • Water

Instructions:

  1. In a blender or food processor, combine the eggs, oats, egg white, powdered peanut butter, sweetener, salt, cinnamon, and baking powder. Blend until smooth.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil.
  3. Pour the pancake batter onto the skillet, into your choice size. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. While the pancakes are cooking, prepare the peanut butter frosting by mixing peanut butter powder with water according to package instructions until desired consistency is reached. You can also add a dollop of regular peanut butter if desired.
  5. Serve the pancakes hot with the peanut butter frosting drizzled on top.
